This stovetop version of Jamaican Mango Jerk Shrimp is very easy to make and packed with lovely Caribbean flavors. 1 1/2 lbs medium shrimp (cleaned and deveined) 1 cup diced mango 1-2 scotch bonnet peppers 3 scallions 4 cloves garlic 4 sprigs thyme 1/2 teaspoon grated ginger 2 tablespoon olive oil (divided) 1/4 teaspoon salt 1 tablespoon dark soy sauce 1 tablespoon brown sugar 1/2 lime (juice) 2 tablespoon parsley (chopped) 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 3/4 teaspoon allspice 1/4 teaspoon black pepper
