Battle of the Stews: Caldo de Res vs. Sancocho

I’ve had both and love them both equally. For those who might not know, you can find out more about Caldo de Res HERE:

“Cocido”, Caldo de res or “puchero” are some of the names this Beef and vegetable stew is known for in México, which, again, it is another meal we in inherited from Spain. This soup allows so many variations from the most simple broth with 2 or 3 vegetables and some herbs to the finest dish that includes different cuts of meat and a great selection of vegetables, that can be savored as a main dish or as an entrée dish.

Soncocho is not just Puerto Rican. My mother was from the Dominican Republic and she would serve us Soncocho. But, it’s actually more complicated. I found one description of the stew HERE:

From the Spanish verb , sancochar or to parboil, Sancocho is a traditional stew popular in several Latin American countries like that of Dominican Republic, Colombia, Cuba and Puerto Rico, among others.
