Eating Comida: Shrimp Tacos with Avocado Cream
It was offered for Lent but it’s really good anytime.
Ingredients:
2.5 lbs shrimp, peeled and deveined
1/4 cup chipotle sauce
2 tbsp honey
1 tbsp Olive Oil
1/2 tsp Salt
1/2 tsp Dry Parsley
1/2 tsp Ground Black Pepper
1 Minced Garlic Clove
Chopped Cilantro to taste
1 lime
Avocado Cream: 1 Avocado, 1 cup Heavy Cream, 1 Lime, 2 Serrano Peppers, 1 Garlic Clove, Chopped Cilantro +Salt (To Taste) +1/2 – 1 Cup Water
To serve: Corn Tortillas, Shredded Lettuce, Limes
